Master of Science in Food Quality and Safety

Master's Program

Ensure the integrity of what we eat with our program, where you’ll delve into the science of food safety and quality, from farm to fork, to safeguard public health.

The Department of Food Science & Nutrition is the first in the State of Kuwait to offer B.Sc. and M.Sc. degrees in Food Science as well as Nutrition area. With a total of more than 3 million residents in Kuwait, it is essential to procure or produce sufficient amount of good quality food to meet the nutritional requirements of this population. The State of Kuwait meets its food requirements by importing most (about 90%) of the food materials from almost all countries of the world. At present, Kuwait meets a part of its requirements for some of the vegetables, eggs, meat, fish, milk, and some fruits (e.g., date fruits and strawberries) through local production.

Due to the importation of food from many developing countries, it becomes imperative to ascertain its quality and safety through proper food control procedures. It is a momentous task for the food control agencies and other relevant ministries in Kuwait to check the imported food materials at all the points of entry into Kuwait, and then at every point of wholesale as well as retail sale points. The Food Control Department, Kuwait Municipality, and the Ministry of Commerce & Industry, Kuwait, need to employ a large number of well-trained food inspectors, food analysts and food managers to execute these important activities. The State of Kuwait needs to develop sound food policies to import the right type of foods, which is not only sufficient enough from the food security point of view, but is also safe and wholesome to meet the nutritional requirements of the Kuwaiti population.  The Department of Food Science & Nutrition at the College of Life Sciences at Kuwait University is proposing a two-year Master of Science program in Food Quality & Safety. In addition to full-time students, part-time students will also be admitted to this program.

The program is designed to prepare post-graduate students for a career with Food Control Department, Kuwait Municipality, Ministry of Commerce and Industries, Food & Nutrition Administration, Ministry of Health, and other organizations dealing with food production, food imports, food storage & distribution, wholesale and retail food business, educational and research institutions, social service agencies, and other governmental regulatory bodies. This program specially takes into consideration the existing factual situation that Kuwait imports most of its food requirements, the hot climate prevailing in this region, the food handling practices being followed by the untrained workers, and to support various educational programs aimed at tackling food quality control-related issues.  

Under this program, a wide range of potential areas for research will be available to students. Research areas include: food control methodology, food quality control, food quality assurance, food testing, problems related to food storage, distribution and retailing, local food production strategies and food security issues, food safety issues, formulation of food policies, management of food testing laboratories and food control systems.


The proposed program aims to blend food science, technology and management principles to provide technical skills, as well as management knowledge to develop effective food control, food storage, food imports and food testing policies for ensuring safe and healthy food in sufficient quantities for every resident of the State of Kuwait.

Program Mission
The mission of the Master of Science in Food Quality & Safety (MSFQS) is to provide high-quality and career-oriented, cutting-edge graduate education in order to meet the requirements of government regulatory bodies and other agencies dealing with the food imports, storage, distribution, quality control, and food quality and safety policies development.

Program Educational Objectives

The objective of the program is to produce graduates who will have the ability to:

Manage food imports, quality control, food safety and food security.
Provide leadership in developing sound food policies for ensuring food security for the State of Kuwait.
Provide a variety of safe and healthy foods to the Kuwaiti residents. 
Apply the cutting-edge food management principles in today's competitive world food market.
Keep pace with the fast-changing food regulations at the local, regional and international levels.
Keep developing skills to tackle emerging problems and policies related to food control, food quality, food safety, food storage, distribution and food security.  


Procedural Objectives
The procedural objective of the program is to produce graduates who:

Apply food policy management principles in solving problems related to food quality, food safety, storage, distribution and food security.
Apply the cutting-edge food policy management knowledge required in today's competitive world food market.
Keep pace with the emerging food policy management issues at the local, regional, and international levels.
Develop innovative food policies related to food control, food storage & distribution, food quality, food safety and quality control with the major objective of ensuring food security for the country.
Design, develop and implement food control, surveillance and intervention program that provide suitable solutions to the emerging food safety and food security problems.
Acquire skills to create awareness among various agencies dealing with the food control, food safety, food import, storage and distribution, for the improvement of overall food security for the State of Kuwait.
To develop skills for testing food for optimal quality, safety and wholesomeness.

Program Details
Graduation Requirements
Requirements with Thesis

Passing all the required courses (35 CRs).
Obtaining minimum GPA of 3.00.
Passing the thesis examination.   
 

Requirements with Non-Thesis

Passing all the required courses (35CR).
Obtaining minimum GPA of 3.00.
Passing the comprehensive examination.   
Thesis Registration

Upon completing one semester, a graduate student may (with the approval of the academic supervisor, the program director and the CGS) register for a thesis in accordance with the following rules:

Completion of a minimum of 12 credits of courses approved for the degree, with a minimum GPA of 2.67.
Registration for a thesis as a full-time study load. It should be noted that registration for thesis may last for more than one semester and the student must register every semester until graduation. The thesis under preparation is given a grade of "Satisfactory (S)" or "Unsatisfactory (U)". The final grade given after thesis examination is either Pass (P) or Fail (F).
